Outback Steakhouse's Alice Springs Chicken

Ingredients:
  • 4 boneless skinless chicken breasts
  • 6 slices of bacon
  • 1 cup sliced mushrooms
  • 3 cups shredded colby or monterey jack
  • honey mustard
Honey Mustard Ingredients:
  • 3/4 cup mayonnaise
  • 1/4 cup honey
  • 1/4-1/3 cup yellow or dijon mustard
Directions:
  • Rub chicken breast with Seasonal All and set aside to marinate for 1 hour.
  • While the breast is marinating fry bacon crisp and drain.
  • Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking.
  • Cook on both sides until a slight golden color and cooked in the middle but not dry.
  • Remove from pan and place in a 9 x 13 dish.
  • Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese.
  • Bake at 350 degrees about 15 minutes or until cheese melts.
  • Sprinkle with parsley and extra honey mustard may be served on the side.

Amber's Birthday Cake Frosting


I love, love, love homemade frosting. I started with a basic butter cream recipe and tweaked it through trial and error. I think it is pretty good. I have probably eaten half a can of shortening worth of frosting in the last week!
1- 320z bag powdered sugar
2 cups regular shortening
1 Tbsp vanilla
6-8 Tbsp milk
Mix and add food coloring if desired. You can add more or less milk for desired consistency.

Fruit Pizza


Crust:
2 Betty Crocker Sugar Cookie Mixes
follow instructions on package
spread over entire cookie sheet
bake @ 350 for 15 minutes
let cool

Frosting:
2 Packages of cream cheese softened
2/3 cup sugar
1 teaspoon vanilla
mix and spread over cookie

add desired fruit
strawberries, kiwi, mango, blueberries, raspberries, etc.

Maxyne's Marinade

I had to call Maxyne for her yummy marinade so I thought I'd share...

1/3 cup soy sauce
1/3 cup oil
1 can of Sprite or other soda

This was plenty for about 10 chicken tenderloins.

Rotel Dip

Rotel Dip

2 cans mexican rotel, drained
6 roma tomatoes, diced
6 avacados, diced
1 small purple onion, diced
1 bunch cilantro, minced
garlic salt to taste
mayo to the consistency you like-- about 1 1/2 cups

Stir all ingredients together and chill in fridge for at least one hour before serving.

Stacy's Dessert for Sunday dinner

Double Chocolate Chip Cookies(photo & recipe from Dani Vest, slightly changed)
Ingredients:
2 1/2 C All purpose Flour
2 tsp. baking soda
1 tsp salt
1 C unsalted butter, @ room temp.
1 C firmly packed golden brown sugar
12 Tblsp granulated sugar
2 Large eggs
2 tsp vanilla extract
2 C semisweet chocolate chips
2 C milk chocolate chips

Preheat 350
mix butter, brown sugar, gran. sugar until smooth
add egg and vanilla~ beat on low until blended
sift dry ingredients
slowly add dry ingredients to mixture
mix in chocolate chips
spoon heaping tablespoon, 2 inches apart
bake 10-13 minutes

makes about 3 dozen cookies
